미리 청주, 생강가루, 다진 마늘, 후추, 간장 약간으로 밑간한 닭을 무쇠솥에 기름 넣고 살짝 지져낸 다음
기름을 잘 닦아내고 양념장을 넣어 끓이다가 지져낸 닭 넣고 조려내면 닭살이 부서지지 않고 간이 쏙 배어 좋다.

양념장은 닭 450그램 기준으로

간장 2.5큰술, 설탕 2큰술, 꿀(요리당) 1큰술, 청주 2큰술, 참기름 1큰술 넣고
마늘, 생강 2~3쪽 저민 것과 마른고추 1개 필요.
